Mash the ripe banana in a large mixing bowl until it is smooth.
In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
Add the Greek yogurt, milk, egg, honey, and vanilla extract to the mashed banana and mix well.
Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
Heat a non-stick skillet over medium heat.
Scoop about 1/4 cup of batter for each pancake onto the skillet.
Cook the pancakes for 2-3 minutes on each side, or until they are golden brown.
